St Louis Spare Ribs are considered by many BBQ enthusiasts to be the preferred pork rib cut due to their uniformity. Like our Baby Backs, they are purchased fresh from a slaughterhouse in Brookshire, Texas. They are then dressed in a dry rub which sets for 24 hours, smoked with fresh hickory hardwoods, and then lightly brushed with VERY SPICY home-made Jalapeno peach sauce. These ribs are not for the faint of heart when it comes to heat as these ribs really bring it!!
One rack will serve 3-4 people ...... and each rack is easily re-heated for some excellent leftovers.
